Wendy wowed the Pilates class this morning with this recipe that everyone wanted written down. Yes, not only can she manage to offer fantastic relationship advice while making your abs cry, she can also impart cooking knowledge while planking it up! So here it is guys, with love from Wendy.

Wendy’s Cob Bread for Entertaining 15 People

Ingredients
Serves: 15-20

  • 1 cob loaf or vienna loaf uncut
  • 1 capsicum finely chopped
  • 1 onion finely chopped
  • 250g chopped bacon
  • 1 cup chopped shallots green ends
  • 250g cream cheese
  • 250g sour cream
  • 1/2 cup grated cheddar cheese

Directions
Preparation:20min  ›  Cook:25min  ›  Ready in:45min

  1. Preheat oven to 180 degrees C. Cook bacon, capsicum, onion and shallots in frypan until soft.
  2. Mix sour cream, cream cheese, grated cheese and cooled bacon, capsicum, onion and shallots in a bowl until combined.
  3. Cook mixture in microwave for 5 minutes on high.
  4. Cut top off cob loaf and pull insides out, careful not to put hole in sides or bottom.
  5. Pour cheese mixture into cob loaf, replace cut off lid.
  6. Cook in preheated oven for 10 minutes.
  7. Place bread from inside the cob loaf on tray and cook in oven with cob loaf for another ten minutes.
  8. Place on serving tray and use the toasted bread to dip into the mixture and eat away. Be careful, mixture will be hot but oh so tasty!
