lentil cookie

It’s still technically winter. So I am still on the bean blitz. (thanks everyone for your great feedback about last month’s kidney bean choc cake)

So warming, hearty, healthy and as a qualified naturopath and yoga teacher mode I really do care sincerely about your bowels! The lentils add fibre and protein to you sweets. They substitute for and therefore lower the fat content of usual cookies I promise no one will ever guess there are lentils inside these bites. However they do mean you can‘t skimp too much on the sugar as the lentils really soaks up the sweetner. But hey, bikini season doesn’t start just yet.

1cup butter, softened

1 cup sugar

1 cup brown sugar

1 ½ cups of pureed tinned lentils

2 tsp vanilla

2 cups cooking oats

3 cups flour

1 tsp sea salt

1 tsp baking soda

1 tsp baking powder

2 cups chocolate chips or chunks

Cream butter, sugars, lentil puree and vanilla. Add dry ingredients and mix well. Add chocolate and drop by spoonfuls on a cookie sheet. Bake at 180 degrees about 9 minutes.
