This was such a hit with my guests and everyone wanted to recipe. My only ego error in the creation was that I prepared it while chatting with my guests, so they got to see how easy it was to make! It’s  a great ratio for special guests: It tastes like a 10 in yumminess but is not more than a 2 in degree of difficulty. Sorry, guys, there are no quantities here – it’s a family hand me down recipe – but you can’t really go wrong!

Ingredients
Chicken thighs
Butter
Olive Oil
Garlic
Fresh thyme, chopped
Good quality parmesan cheese
Breadcrumbs
Slivered almonds

Creation

Preheat oven to 180 degrees.

Melt a little butter and oil, then crush some garlic into it. Roll thighs in the oil (I just love typing that phrase!). Place in a baking tray.

Whizz up breadcrumbs, parmesan and thyme leaves. Then stir in the slivered almonds. Generously pack this mix over your chicken and bung in the oven. Bake for 45-60 minutes. You are meant to baste it during the cooking. I never do and still it comes out as crispy crunchy heaven. Enjoy!
