We all had such a great time at our teacher’s Christmas Party. We kicked off with a nice take on eggnog. With the spices, it tasted just like Christmas in my mouth. I made it with my homemade almond milk and the recipe  suggests rice milk. It’s quick to whip up.  Some of our students have heard about it and asked for the recipe. So here it is!

Ingredients:

  • 3 cups of rice milk
  • 1 cup of coconut cream
  • 1/2 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1 tsp freshly grated nutmeg
  • 1 tsp mixed spice
  • 4 large organic egg yolks
  • 1/4 cup brandy
  • 1/4 cup sherry
  • 1/4 cup dark rum

Method: 

  1. Blend all ingredients together until it is light and fluffy. Pour over a glass of ice and a ‘must do’ finishing touch is to sprinkle with freshly grated nutmeg.
  2. To go the extra mile with your eggnog prior to pouring the blended ingredients in the glass, on a plate mix a little bit of cinnamon with some brown sugar, wet the top of the glass and dip it into the mix on  the plate.
  3. Let this dry before pouring your eggnog into glass with ice. Serve immediately and enjoy.
