Kale shines nutritionally: High in fibre, iron, potassium and Vit A and for a vegetable, not bad in protein.

If you are having a mother’s day gathering these are a healthy hit. They will be demolished by grown ups and kids alike.

This has to be the best way to consume all the goodness that’s in a bunch of kale. (Alas, they seem so absorb humidity so they won’t keep for lunchboxes.)

  2. Mix through a little olive oil, salt and your choice of spices. It’s really
  3. Wash and dry a bunch of kale.
  4. Cut off the stem and cut the leafy bits into small pieceseasy to oversalt. Go for 6 pinches of salt for a whole bunch of kale.
  5. Play around with your spices. We love a teaspoon of smoked paprika and some dried chili seeds on. If you are sore from a tough workout, you can try turmeric for anti-inflammatory assistance.
  6. Spread out on a baking paper lined baking dish. (For a bunch of kale, we do 2 batches of two trays each).
  7. Bake for 12 minutes. Check after 10. They won’t look crunchy to your eye, so touch to test.

Remove when crunchy. Cool slightly and devour with glee!
